I found this recipe in my friend Cheri’s book, The Complete Idiot’s Guide to Easy Freezer Meals. She was kind enough to send me a copy and I was eager to try something for breakfast first. Cheri and I have known each other since the late nineties and I’ve always known she was a whiz at freezing meals.

Having these freezer breakfast burritos was a great way to keep my kids fueled up until lunch time. Pop them in the microwave quick and off they went. Simple enough for a fast paced environment.

When my kids were in high school they constantly ran out of the house with an empty stomach, which meant they had to wait until lunch to eat anything. Having these freezer breakfast burritos was a great way to keep them fueled up until lunch time. Pop them in the microwave and off they went. A nice and simple breakfast for your fast paced environment.

I make these all the time. Big batches of them. I fill the burritos with all sorts of good stuff. Whatever we both like and what I happen to have on hand at the time.



My real name is Debra (Debbie Sue). Sarah is a nickname given to me in high school. My husband has always called me that so here in Florida It's all I am known by. I was born and raised in Illinois. My son and I moved to Colorado in 1982. I taught school for 17 years. Then I ran a homeschooling/preschool/daycare until 2006 when I moved to Florida after my son, Bobby died suddenly. He was almost 26. Danny and I live and work at a state park here. I miss the mountains and climate of Colorado. I miss snow and the four seasons. I miss Bobby.
