A Spring-Inspired Cheese Board with Pickled Fennel
By  Wild Greens And Sardines

For my spring inspired cheese board, I’ve included:

Cheese — use an assortment of cheese (soft, semi-hard, hard, marinated)

Fruit/Vegetables/Nuts — don’t be afraid to add some color
  • pickled fennel
  • pea pesto
  • pea tendrils
  • watermelon radish
  • sliced apples
  • green and black olives
  • Marcona almonds with rosemary
  • Other suggestions: seasonal fruit (grapes, orange slices, berries, figs, etc.)
Meats — can’t go wrong with cured meats (or even smoked fish)
  • pork pate with pistachios
  • hot soppressata
  • Other suggestions: thinly sliced prosciutto or country ham

Condiments — don’t forget the honey (a little something sweet pairs well with cheese)

  • honey
  • Other suggestions: fruit preserves/jams/chutneys (see video below for a sweet and spicy carrot chutney)

  • homemade whole wheat crackers
  • grilled baguette

Of course these are just suggestions, include all or some, or whatever suits your taste.

What else would you include on your spring-inspired cheese board?

My real name is Debra (Debbie Sue). Sarah is a nickname given to me in high school. My husband has always called me that so here in Florida It's all I am known by. I was born and raised in Illinois. My son and I moved to Colorado in 1982. I taught school for 17 years. Then I ran a homeschooling/preschool/daycare until 2006 when I moved to Florida after my son, Bobby died suddenly. He was almost 26. Danny and I live and work at a state park here. I miss the mountains and climate of Colorado. I miss snow and the four seasons. I miss Bobby.

Please Comment. I don't care how long or how short. I want to hear from you.
