      Ingredients

      3 tablespoons vegetable oil
      1 pound andouille sausage , sliced
      2 pounds boneless-skinless chicken thighs, cut in 1-inch cubes
      1½ pounds large fresh shrimp, peeled and deveined
      1½ cups chopped onion
      1½ cups chopped celery
      1½ cups chopped green bell pepper
      3 cloves chopped garlic
      3 cups long-grain rice
      5 cups chicken broth
      Dried thyme, to taste
      Dried basil, to taste
      Dried oregano, to taste
      Tony Chachere’s Original Creole Seasoning, to taste
      Tony Chachere’s NO SALT Seasoning Blend, to taste
      2 bay leaves

      Definitely rice. And andouille sausage. You can use any sausage you want to.
      I don’t usually use the word risotto but I think this qualifies.

        1. No one I have ever been around has. It’s just rice. LOL I never think of using it.
