“When the nights become cold and the air is heavy with smoke from the chimneys, our thoughts turn to hardy meals that bring comfort on a chilly night. Nothing is so comforting as a good beef stew. This stew is made even better with dumplings.
I adore dumplings. Hubby on the other hand isn’t wild about them. I think that may be due to his not being a fan of boiled chicken or a chicken stew. Chicken and dumplings were a big part of my childhood. Stews were a big part of Hubby’s childhood. This wonderful stew brings both together in a delicious, filling and oh so satisfying way. “
From Sarah : My favorite meal is my mom’s version of Chicken And Dumplings. (Not Southern) A close second is a good roast beef stew and dumplings. Danny would rather have Southern Dumplings and a simple chicken and broth version of Chicken And Dumplings.. I want carrots, celery, onions , and puffy herbal dumplings in mine. I want bigger chunks of meat. I always roast a whole chicken. He is enjoying my version more and more. I make both versions.

“Today I am sharing one of my favorite quick and easy sides- 5-Ingredient Corn Casserole. This is a go-to side dish for me when I am trying to put together a menu, and just need “one more thing” to make it perfect. This dish is prepped in minutes, and is versatile enough to serve with pretty much any of your holiday favorites.
This casserole is filled with whole kernel corn, creamed corn, corn muffin mix, sour cream, and melted butter. The result is a rich, buttery, savory, sweet, delicious side with a firm pudding like texture and studded with whole corn kernels. I serve this casserole warm, but it delicious at room temperature as well.”
