“This is the first year I am going into the holiday season as someone who eats whole food plant based (aka healthy vegan, more on WFPB here) 90% of the time. I’ve shared this before, but about 1-2 times a month, I’ll have seafood at a restaurant. Also, ya girl still loves extra virgin olive oil, so I haven’t completely cut oils out, though I am mindful of how much I use. Maybe one day I’ll cut this out completely, but today is not that day. Regardless, eating WFPB means I need to plan ahead this holiday season so I can enjoy the holidays without stressing.”

My sweet baby boy was born Oct. 21 2019 at 12:14 P.M. after a traumatic delivery. I had planned on a full-on natural delivery at a birth center, but baby had other plans (see full birth story coming soon). I am now 2 weeks postpartum, and I wanted to give new moms a list of things I REALLY have used so they can see how much isn’t needed, and maybe see some things they would have never thought about needing. Chick-fil-A’s version has kale, baby broccoli, dried cherries and assorted nuts all tossed in a sweet and sour maple dressing. When Mom and I tried it, we were really impressed. So immediately I started thinking how I could make this. Surely it couldn’t be that hard? And ya know what? It really wasn’t. And y’all know me, I still gotta keep it easy so I am using a bottled dressing. This salad came together in minutes! Feel free to change it up to suit your tastes. I think you could add sunflower seeds or almonds or even carrots in this and it will only get better!”
“Who knew eating healthy could be so delicious? This hidden spinach healthy guacamole packs in a whole serving of vegetables (not that you would ever be able to guess it from the taste!) There are so many delicious dips and spread recipes available these days, throwing in a healthy and veggie-packed alternative is a must! Plus who doesn’t love guacamole? So smooth and full of flavor, it never seems to disappoint. This healthy guacamole is especially good as an appetizer for when you have guests over, it’s always a crowd pleaser!”
